Roasted Vegetables

Roast vegetables are a delicious simple side dish for really any meal.  You can use what ever types of veggies you like.  I love roasted broccoli, zucchini and mushrooms.  Season however you like as well, from salt and pepper to the addition of garlic, thyme and rosemary!! The possibilities are endless!!!!

  • 3 cups chopped broccoli
  • 2 cups chopped mushrooms
  • 2 cups cherry tomatoes, halved
  • 3 cups sliced zuchinnni
  • Olive oil
  • Salt and pepper to taste
Directions
  1. Place vegetables onto a foil lined baking sheet. Drizzle over olive oil and season with salt and pepper. Toss to fully coat vegetables with oil and seasoning. Bake in 400 degree oven for 25 to 30 minutes or until slightly golden and tender. Serve immediately.
